The breve is a latte with the milk swapped for half-and-half, and that one substitution changes everything. The body goes dense. The sweetness comes forward from the extra dairy fat, not from any added sugar. The espresso stays loud underneath. It's the drink to order when you want dessert that qualifies as breakfast, and it's one of the quiet favorites of anyone who's worked behind the bar for more than a year.

How We Build It

Half-and-half instead of whole milk — this is non-negotiable, it's what makes it a breve. One shot in the 10oz, two in the 12 and 16. Steamed to show off the dairy fat sweetness without scalding; a breve that goes past 150°F picks up a cooked-dairy taste that ruins the drink. We'll make it with non-dairy on request, but it stops being a breve at that point — ask the barista and we'll figure out what to actually build you.
